PECORINO

The Chiacchiarini family have been making this pecorino for generations unknown. It’s a traditional, hand -made pecorino with a delicate flavour and a wonderfully rich aroma. They have an ancient recipe and the entire cheese making process is done according to family traditions and secrets while adhering to the most stringent EU requirements.

Their flock of Italian milking sheep originate from an ancient Umbrian breed – the sopravvissana – which produce very high quality milk. They are tended to with great care and passion, and their fodder consists of natural pasture and locally grown winter cereals. They are hand-milked twice daily, ensuring the best quality milk possible.

They also maintain the centuries-old tradition of the transumanza: walking the flock from their winter home in Montefalco to the ancestral lands of the mountains surrounding the small village of Pettino, high in the Umbrian Appenine mountains, the home of the greatest Italian pecorino cheese.
